Un grand chantier de restauration achevé en 2002 a donné un nouvel éclat à cette salle, avec notamment la pose de près de 10 000 carreaux à motifs et 30 000 carreaux unis, fabriqués selon des techniques médiévales. L’élégance de cette salle (pourtant utilitaire) et la structure aérienne de son architecture rappellent la fonction liturgique du repas chez les moines cisterciens.
